Chocolate from 1909 Recipe Book

 Chocolate

Ingredients,–An ounce of butter, a teaspoonful of Swiss milk, and two teaspoonfuls of Cadbury’s cocoa.

Method.–Melt the milk and butter in a tin, add the cocoa, and mix  all three together.Have  ready a pan of boiling water, put a plate over, and place the tin on the plate for twenty minutes. Let cool, and cut into bars. Enough for four ounces of chocolate.

Swiss  Roll Cake

Beat up two eggs with two ounces of castor sugar, add four ounces of flour lightly,and mix in a teaspoonful of baking powder. Line a greased yorkshire pudding tin with paper, melt a small piece of butter, and brush the paper all over with it. Pour the cake mixture in, and bake it in a quick oven for about ten minutes. Turn it on to paper sprinkled with castor sugar. Mix two tablespoonfuls of raspberry jam with one tablespoonful of hot water, spread this over, and roll up quickly.jam roll cake

Lemon Cake

Lemon Cake

One pound of flour, half a pound of margarine, six ounces of sugar, a teacupful of milk, a pinch of salt, the rind of one lemon, and a tablespoonful of egg- substitute powder. Cream the margarine, add the sugar, grated lemon rind, and flour, moistening the whole with milk, lastly, add the egg powder. Beat all together, and put in a well greased tin, and bake in a moderate oven for a little over an hour.

Take the remains of any cold vegetables, and cut into pieces, and fry in hot dripping in which curry powder has been mixed, also some salt. Add a sliced onion,and brown.Then pour into the pan half a pint of gravy or milk. Simmer for ten minutes, and just before dishing up squeeze the juice of a lemon into a pan. Serve with a border of well boiled rice.
