Ginger Biscuits Recipe from 1855
Ingredients.—- 1 pound of flour, half pound of fresh butter, half of powdered lump sugar, three quarters oz of ground ginger, two eggs.
Method.—-Rub butter into flour,add the sugar, ginger, eggs.Mix thoroughly, divide into small round biscuits, and bake for five minutes in a quick oven.
Steamed Ginger Pudding Recipe 1909 Edwardian
Six ounces of flour, three ounces of suet, three ounces of preserved ginger, three ounces of moist sugar, two eggs, a tablespoonful of milk.
Method.– Mix all these ingredients well together, put into a buttered mould, and steam for two hours and a half. Serve with jam sauce if desired. This is made by putting half a pint of boiling water into a saucepan and adding half an once of arrowroot which has been mixed into paste. Add a teaspoonful of sugar. Boil this for five minutes, add jam of any kind preferred, and then strain through sieve.
Peel forty small oranges, divide each into four. Put in a preserving pan, cover with water, and boil with water, and boil to pulp, strain. To every pint of juice allow a pound of sugar. Cut into small pieces one pound of green ginger, add it to juice, after bringing this to the boil. Boil for an hour, or until it will set.
