Make sufficient hot potatoes to make a pint. Beat three eggs until light, season with salt and pepper, and mix with the potatoes. Melt a tablespoonful of butter in the frying pan, pour side to side to brown evenly. When the bottom is coloured,fold in carefully, and serve at once.
Ingredients – Half a tin of tomatoes, half a cupful of breadcrumbs, three eggs, half an ounce of butter, pepper and salt.
Pulp the tomatoes, beat the eggs and mix with the crumbs, and add the seasoning. Melt the butter in a shallow dish, pour in the mixture, bake half an hour.Toss on a hot dish, and serve.
