Salmon Pie Recipe from 1916
Take a tin of salmon, free the fish from skin and bone, and divide into small pieces. Season with salt, and pepper, and cayenne. Butter a pie – dish, and cover the bottom with a layer of potatoes that have been mashed with hot milk. Next put a good layer of salmon, and cover with a layer of potatoes. Moisten with a little hot milk, roughen the top of the pie with a fork, place in a brisk oven, and bake till hot through and the surface is slightly browned.
Mash four cooked potatoes with a little butter, the yolk of an egg, and a little flour to make the mixture firm. Beat the white of the egg to a stiff froth, and add it. Mix all together, and fry in a little boiling fat.

Take a pound of cooked potatoes and mash them very fine. Mix with a pound of flour and enough milk to make a stiff dough. Divide into cakes, and bake. Open and butter when hot.

Fry one or two onions in an ounce of fat till brown, according to taste, Mixed with a little milk, and a little desiccated coconut if liked. Then mix in any cold vegetable you have. This makes a delicious supper dish, served with boiled rice.

Slice four large onions, put them in a saucepan with two tablespoons of rice, a pound of sausages, and half a pint of cold water. Boil for a half an hour. Serve with mash potatoes.
